An Unexpected Encounter in Waikiki
Last September, my husband and I embarked on a trip to Hawaii, a blend of work and leisure. While Mr. Wishes attended a work meeting in the Marshall Islands, requiring a stopover in Honolulu, I, of course, couldn’t resist tagging along – it was Hawaii, after all! During our stay at a hotel in Waikiki Beach, we frequently visited the “Regency Club,” a comfortable lounge offering food and a relaxing atmosphere throughout the day. It was a cozy space, furnished with tables, couches, a TV, and computers. Day after day, we noticed an elderly gentleman occupying the same spot on a couch, always alone. Sometimes he would gently doze off, other times he would be engrossed in whatever football game was playing. Without fail, he wore a hat emblazoned with “USS Missouri.”
Overcoming Shyness to Forge a Bond
I confess, I’m naturally quite a shy person, rarely initiating conversations with strangers. Yet, an undeniable instinct urged my husband and me to speak with this man. It takes a lot for me to overcome my nervousness about small talk, often fearing I might be intruding. After a few days of observation, I finally confided in my husband, suggesting we approach him, sensing he might be feeling lonely. To my surprise and delight, my husband revealed he had been thinking the exact same thing! It was a clear sign, a shared intuition we couldn’t ignore. We walked over, sat down beside him, offered warm smiles, and introduced ourselves. He seemed genuinely pleased to have company.
A Mind-Blowing Revelation
When we asked him where he was from, he replied, “Rochester, NY.” I asked him to repeat himself, disbelieving what I’d heard. He was from our very own city, living only about 20 minutes away from us! We were almost 5,000 miles from home at the time, and the sheer coincidence was absolutely mind-boggling. What were the chances of such an encounter across oceans?
Honoring a Hero: Sam’s Inspiring Story
In that moment, we understood the profound urge that had compelled us to speak to him. His name was Sam, and at 93 years old, he traveled to Waikiki every year by himself. He had initially come with his wife, and after her passing several years ago, he bravely continued the tradition. Sam, a Navy veteran, was visiting the Pearl Harbor Memorial, a poignant pilgrimage. He had fought bravely in World War II and was aboard the USS Missouri when the Japanese surrendered in 1945, marking the 70th anniversary of that historic event during our visit. It was on the deck of the USS Missouri, on September 2, 1945, that General Douglas MacArthur formally accepted Japan’s surrender, bringing an end to the Second World War.
Today, the magnificent USS Missouri is permanently docked at Pearl Harbor, Oahu, Hawaii, specifically at Ford Island. The Battleship Missouri Memorial stands as a powerful tribute, offering tours to visitors from across the globe. Sam proudly showed us a special card from his wallet, certifying his presence on the ship at the time of the surrender. We were so captivated by this piece of history that we asked to take a picture of it, an honor to witness such a personal connection to a pivotal moment in history.
The Gift of “Porksgiving”: Expressing Gratitude Through Food
Sam mentioned that he didn’t get out much, and my husband and I immediately offered to bring him food sometime. Without a doubt, Sam was the person I wanted to honor through the Porksgiving program – a man who had given so much, who deserved to be given back to. Today, I extend my heartfelt “thank you” to him with a delicious home-cooked meal, a small token of appreciation for his years of dedicated service and immense sacrifice. This gesture brought him so much joy! He humbly noted how people everywhere always seem to “take care of him,” and it’s clear he profoundly deserves every bit of that kindness. We also discussed delivering him his favorite food, pizza, one day, and he even hinted at wanting to try a pie from my in-laws’ pizzeria! I also commended him for his unwavering dedication in making the annual journey to Hawaii, recognizing the challenges of travel at his age.
Inspired by Sam’s story and the true meaning of gratitude, the National Pork Board and I wholeheartedly encourage you to celebrate “Porksgiving.” Take the opportunity to prepare a creative and comforting pork dish to recognize someone in your life who truly deserves appreciation – a silent hero, a tireless helper, or simply someone who brightens your world.

- 6 boneless, thinly sliced New York Pork Chops
- ½ cup all-purpose flour
- 2 large eggs, beaten
- 1 cup Panko bread crumbs
- Salt and pepper, to taste
- ¾ cup + 2 Tbsp pure olive oil, divided
- 5 oz fresh baby spinach
- 2 Tbsp roasted red tomatoes, thinly sliced
- 1 tsp chopped fresh Italian Parsley leaves
- Zest of ½ lemon
- Prepare three separate shallow bowls: one with flour, one with beaten eggs, and one with Panko bread crumbs.
- Season each pork chop generously with salt and freshly ground pepper. First, coat each chop thoroughly with flour, then dip it into the beaten egg, allowing any excess to drip off, and finally, press it into the Panko bread crumbs, ensuring both sides are well coated.
- Heat ¾ cup of olive oil in a large frying pan or skillet over medium-high heat until the oil faintly shimmers or begins to smoke lightly.
- Carefully add the breaded pork chops to the pan in small batches, ensuring not to overcrowd the pan. Cook for approximately 2-3 minutes per side, using tongs to turn them over when the edges turn a beautiful golden-brown. Continue cooking until the internal temperature reaches between 145 degrees F (medium-rare) to 160 degrees F (medium). To verify doneness, insert a reliable meat thermometer halfway into the thickest part of the pork chop.
- Once cooked, remove the pork chops from the pan and let them drain on a plate lined with paper towels to absorb any excess oil. Repeat this process with the remaining pork chops.
- Using the same pan (after carefully draining most of the oil, if necessary), heat the remaining 2 tablespoons of olive oil over medium-high heat. Add the fresh baby spinach and thinly sliced roasted red tomatoes to the pan. Cook, stirring continuously, for about 2 minutes, or until the spinach has just wilted and both the spinach and tomatoes are heated through.
- Transfer the crispy pork chops to a clean serving platter. Generously top each cutlet with the flavorful spinach and tomato mixture.
- Finish by sprinkling with fresh chopped Italian parsley and garnishing with a delicate touch of lemon zest for added brightness.
