This isn’t just any loaf; it’s a testament to the simple joys of homemade baking and a recipe that consistently surpasses all expectations. The moment I first encountered this gorgeous creation on The Pioneer Woman’s site, I knew I simply had to try it. Its perfect golden bloom and artisan appeal were irresistible, promising a bread that was as beautiful as it was delicious.

  • 20 ounces (about 4 Cups) Bread Flour – using bread flour provides the necessary gluten for that perfect chewy texture and structure.
  • 8 ounces (fluid) Water – the hydration level is crucial for dough elasticity.
  • 4 ounces (fluid) Melted Butter with Chopped Herbs of Choice (Chives, Rosemary, or Thyme would all work beautifully – feel free to eyeball the amount, I personally love using a lot for maximum flavor!). The butter adds richness, while the herbs infuse the bread with aromatic notes.
  • 2 teaspoons Salt – essential for flavor and regulating yeast activity.
  • 1 teaspoon Active or Instant Yeast (If using Active Dry Yeast, it’s best to sprinkle it over the water first and let it bloom for about 5-10 minutes before mixing with other ingredients. Instant yeast can be mixed directly with the dry ingredients).

DIRECTIONS:

  1. Combine Ingredients: In the bowl of a KitchenAid stand mixer fitted with a dough hook, combine all ingredients. While a stand mixer significantly simplifies the process, this recipe can absolutely be made by hand; it will just require a bit more time and effort.
  2. Knead to Perfection: Mix the ingredients together for approximately 10 minutes, or until the dough passes the “windowpane test.” To perform this test, pull off a small piece of dough and gently stretch it between your fingers. If you can stretch it thin enough to see light through it without it tearing, your dough has developed sufficient gluten and is ready. This elasticity is key for a light, airy crumb.
  3. First Rise (Bulk Fermentation): Once the dough has achieved the desired elasticity, place it in a lightly oiled bowl, cover it tightly with plastic wrap, and let it sit at room temperature for 1-4 hours, or until it has visibly doubled in size. The ambient temperature will affect the rising time, so observe the dough rather than adhering strictly to the clock.
  4. Degas and Redistribute Yeast: After the first rise, gently knead the dough for just a minute or two. This step helps to redistribute the yeast and gases, ensuring an even texture in the final loaf.
  5. Preheat Oven: Preheat your oven to 450 degrees Fahrenheit (232°C). This high initial temperature is crucial for achieving that desirable crispy crust.

This scoring not only creates the iconic “bloom” effect as the bread bakes but also allows steam to escape, contributing to its unique texture and appearance.
  8. Bake in Stages: Place the covered cast iron pan on the center rack of your preheated oven. Bake with the lid on for 30 minutes. The lid traps steam, which helps the crust develop slowly and prevents it from browning too quickly, resulting in a soft interior.
  9. Finish Baking: After 30 minutes, remove the lid and continue baking for another 15 to 30 minutes, or until the crust reaches a deep golden brown and sounds hollow when tapped. For precise results, use a thermometer; the internal temperature of the bread should register between 200-210 degrees Fahrenheit (93-99°C).
  10. *Important Note on Browning: If you notice the bottom of your bread browning too quickly, it might be due to its proximity to the heating element. Should this occur, you can carefully slice off the overly browned portion with a sharp knife after baking, though usually, adjusting rack placement helps prevent this.
  11. No Dutch Oven? No Problem!: While a Dutch oven provides superior results due to its ability to create a steamy environment, you can still make this delicious bread on a regular baking sheet. Simply place the shaped dough directly on a parchment-lined baking sheet. As always, keep a close eye on the color to prevent over-browning, and the thermometer trick for checking internal temperature will be particularly helpful to ensure it’s cooked through without drying out. You can also create some steam in your oven by placing a shallow pan of hot water on the bottom rack during the initial baking phase.
