Pasta salad is one of those reliably perfect dishes for warm-weather meals. It works as a vibrant side or, when packed with vegetables or protein, stands on its own as a main course. - Cook the pasta fully—not just al dente. For most pasta salads, fully cooked pasta gives a creamier, more pleasant texture.
- Rinse the pasta briefly after cooking to remove excess starch that can make the salad gummy.
- Rinse with cool water to stop the cooking so the noodles don’t become mushy as they cool.
Pasta Salad Dressing
There are many great dressing options. A simple olive oil–based vinaigrette is classic and light. You can also use leftover vinaigrette or homemade Italian dressing, stretched with a little extra olive oil if the dressing is very acidic.
For a creamier salad, try a mayo-based dressing. Good choices include herbed mayonnaise (loosen with a splash of milk), homemade ranch, avocado ranch, Caesar, or Green Goddess. Each gives the salad a different character, from tangy to rich and herb-forward.
One useful trick: add some dressing to the pasta while it’s still slightly warm. Rinse the cooked pasta briefly in cool water to slow cooking, but leave it just warm enough so it can absorb some dressing. Toss the warm, lightly dressed pasta with the other ingredients, then add the remaining dressing to coat everything evenly. This helps the flavors meld and keeps the salad more flavorful.
