
I’m at the end of a restorative week at The Golden Door with my friend Melissa. We’ve visited together three times and already can’t wait to return. This year has been challenging for many of us — try to carve out small moments for yourself, whether it’s a walk in nature or 15 minutes of meditation. And don’t forget to check something off your bucket list.
The August class for my monthly online students is nearly finished editing and will be delivered soon. In the meantime, here’s a simple, delicious dinner plan for the week:
Meatless Monday: Eggplant meatballs on roasted spaghetti squash (see the spaghetti squash roasting method)
Tuesday: Charred corn salad with tomatoes and avocado; grilled shrimp
Wednesday: Mediterranean skillet chicken and rice with grilled zucchini
Thursday: Roasted ratatouille with seared scallops
Friday: Slow-cooker barbecue pulled chicken sandwiches, coleslaw, and baked chipotle sweet potato fries
Saturday brunch: Chickpea and deconstructed pesto salad
Sunday: Tasty turkey burgers, zesty potato skewers, and a green salad with everyday dressing #2
Here are a few prep suggestions to make the week easier:
Sunday
- Roast the spaghetti squash
- Assemble the eggplant meatballs
Tuesday
- Marinate the chicken for the skillet chicken and rice
Wednesday
- Prepare the ratatouille and plan to reheat it the next day
Thursday
- Cut the sweet potatoes for fries
Friday
- Cook the chickpeas if you’re using dried beans
