  • 3 Tbsp fresh lime juice
  • 2 tsp ground cumin, divided
  • 2 tsp chili powder, divided

  • 1 Tbsp olive oil (for chicken paste) + 2 Tbsp olive oil (for sautéing)
  • 4 Tbsp unsalted butter
  • 3 tsp minced garlic
  • 1 tsp dried parsley
  • 4 large boneless skinless chicken breasts
  • 1 [10 oz] package of saffron rice
  • 1 [14 oz] can chicken stock
  • 1 [10 oz] can cream of chicken soup
  • ½ cup mild or medium salsa
  • 1 cup cooked black beans, rinsed and drained
  • 1 cup frozen sweet corn
  • ⅓ cup fresh cilantro, chopped
  • 1 cup shredded Colby-Jack cheese
  • Chopped chives or green onions, for garnish (optional)

  1. Grease the inside of a 6-quart slow cooker with non-stick cooking spray.
  2. In a small bowl, mix together 3 tablespoons of lime juice, 1 teaspoon of olive oil, and 1 teaspoon each of ground cumin, garlic salt, and chili powder to form a paste.
  3. Rub this mixture generously all over the boneless, skinless chicken breasts, then set them aside.
  4. In a skillet on the stovetop, heat 2 tablespoons of olive oil over medium heat. Add the diced red bell pepper, poblano pepper, and onion, and sauté until they are soft, about 5-7 minutes. Season with salt and pepper to taste, then add the butter to the skillet.
  5. Slowly pour in the chicken stock to deglaze the pan, scraping up any browned bits from the bottom. Stir in 1 teaspoon each of ground cumin, minced garlic, chili powder, and dried parsley. Simmer for 1-2 minutes to allow the flavors to meld.
