How to Freeze Soup

Use freezer-proof containers or heavy-duty resealable bags. Leave about 1/2 inch of headspace at the top of the container so the soup can expand as it freezes without cracking the lid. Portion soups into pint or quart containers to make defrosting quicker and more convenient.

Label each container with the soup name and the freezing date. A piece of masking tape and a permanent marker works well—the label should remain legible even if frost forms on the container. It’s easy to forget what’s in an opaque container, so labeling prevents accidental surprises.

Freezing Soups with Dairy

If your recipe is finished with cream, sour cream, or other dairy, don’t add it before freezing. Freeze the base soup without dairy, then stir in the cream or other dairy when you reheat. This helps preserve texture and prevents separation.

How Long Will Frozen Soup Last?

Most soups keep well for 6 to 9 months in the freezer. For best flavor and texture, try to use them within this window and rotate your stock so older containers are used first.

Defrosting Soup

There are several safe ways to defrost soup:

  • In the refrigerator: thaw overnight or over a day or two, depending on the container size, then warm on the stove.
  • In the microwave: use the defrost setting and then finish heating on the stove for even warming.
  • From frozen: put the frozen block in a pot and warm slowly over low heat, stirring frequently to break it up and heat through.

Making soups in double batches is efficient—serve some now and freeze the rest to save time later or share with friends and neighbors.
