Embracing Inclusive Baking: My Journey with Dairy-Free Options

My journey into dairy-free baking began out of necessity when my daughter developed a cow’s milk protein allergy, which later extended to soy. This dietary restriction presented a significant challenge, especially for someone who cherishes baking, particularly during the holiday season. The thought of missing out on beloved Christmas cookies and desserts was truly disheartening.

However, a wonderful discovery transformed my baking experience: Earth Balance butter sticks. While this isn’t an advertisement, I wholeheartedly share this find for anyone facing similar dietary challenges. This remarkable butter alternative is both dairy-free and soy-free, and it performs identically to regular butter in all my recipes. It bakes beautifully, yielding the same rich flavor and texture I’ve always loved.

Finding such a reliable substitute has been a game-changer, allowing me to continue creating all my favorite baked goods without compromise. I’ve successfully used it in my apple cider cupcakes and my famous Levain Bakery Chocolate Chip Cookies, and the results were indistinguishable from the original recipes—some might even argue they were better! This experience taught me that dietary restrictions don’t have to limit your culinary creativity, and with the right ingredients, everyone can enjoy delicious homemade treats.

Crafting Your Perfect Salted Caramel Apple Cheesecake Bars

Let’s delve into what makes these bars so exceptional, from the foundational crust to the glorious caramel drizzle.

The Buttery Shortbread Crust

Every great bar dessert starts with a solid foundation, and our shortbread crust is just that. Made with simple ingredients like all-purpose flour, light brown sugar, and softened butter, it bakes into a firm yet crumbly base that perfectly complements the creamy filling. The key here is to cut in the butter properly, creating a sandy texture that, when pressed into the pan, forms a wonderfully tender and flavorful crust. This step sets the stage for the layers to come, providing a delightful contrast to the smooth cheesecake.

The Creamy Cheesecake Filling

The heart of these bars is a velvety cheesecake filling that’s rich, tangy, and utterly decadent. Two packages of cream cheese, beaten with sugar, eggs, and a touch of vanilla extract, create a luscious layer that offers a classic cheesecake experience in a convenient bar form. Ensure your cream cheese and eggs are at room temperature for the smoothest, lump-free filling. This creamy layer acts as a beautiful canvas for the spiced apples.

The Spiced Apple Layer

What’s fall baking without apples? For this recipe, we use Granny Smith apples, known for their tartness and ability to hold their shape when baked, preventing a mushy texture. Peeled, cored, and diced, they are tossed with a blend of sugar, cinnamon, and nutmeg. These warm spices infuse the apples with irresistible autumnal flavor, making them the perfect companion to the rich cheesecake. The apple layer adds a wonderful textural element and a refreshing burst of fruitiness.

The Irresistible Streusel Topping

The streusel topping is the crowning glory of these cheesecake bars, adding a delightful crunch and a hint of sweet, spiced goodness. A simple mix of packed light brown sugar, all-purpose flour, quick-cooking oats (don’t use old-fashioned, as they can alter the texture), and softened butter creates that perfect crumbly texture. This topping bakes to a golden perfection, providing a comforting, homemade feel and an extra layer of flavor that ties all the components together.

The Salted Caramel Drizzle

Homemade Salted Caramel Apple Cheesecake Bars with a buttery shortbread base, smooth cheesecake layer, spiced apples, crumbly streusel, and a generous salted caramel drizzle, perfect for autumn and holiday gatherings.

While these bars are absolutely divine on their own, the salted caramel drizzle takes them to an entirely new level. The salty notes perfectly balance the sweetness of the apples and cheesecake, creating a complex and incredibly satisfying flavor profile. You can opt for a high-quality store-bought salted caramel sauce for convenience, or if you’re feeling ambitious, try making your own! My friend Anna’s Salted Caramel Butter Sauce is a fantastic homemade option that guarantees an extra layer of deliciousness. If you prefer a slightly less sweet dessert, feel free to serve them without the caramel; they will still be an absolute hit!

Recipe Type: Dessert

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup packed light brown sugar
  • 1 cup (2 sticks) butter, softened to room temperature
  • Two 8-ounce packages cream cheese, softened to room temperature
  • 1/2 cup sugar, plus 2 tablespoons, divided
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 3 Granny Smith apples, peeled, cored and diced
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup salted caramel topping

Streusel Topping:

  • 1 cup packed light brown sugar
  • 1 cup all-purpose flour
  • 1/2 cup quick cooking oats (don’t use old-fashioned oats)
  • 1/2 cup (1 stick) butter, softened to room temperature

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a medium mixing bowl, combine flour and brown sugar.
  3. Cut in 1 cup of butter with a pastry blender until mixture is crumbly. Press evenly into a 13 x 9 baking pan lined with heavy-duty aluminum foil.
  4. Bake for 15 minutes or until lightly browned.
  5. In a large bowl, beat cream cheese with 1/2 cup sugar in an electric mixer at medium speed until smooth.
  6. Add the eggs one at a time, beating well after each addition. Stir in vanilla extract.
  7. Pour this cream cheese mixture over the warm crust.
  8. In a small bowl, stir together the diced apples, remaining 2 tablespoons sugar, cinnamon, and nutmeg. Spoon evenly over the cream cheese mixture.
  9. Sprinkle evenly with the Streusel Topping (recipe follows).
  10. Bake for 28-30 minutes, or until the filling is set. The edges may be slightly golden, and the center should have only a slight jiggle.
  11. Remove from oven and let cool completely on a wire rack. For best results, chill in the refrigerator for at least 2 hours (or overnight) to allow the bars to set fully, making them much easier to cut cleanly.
  12. Drizzle generously with salted caramel topping just before serving. Enjoy these festive and delicious bars!

Streusel Topping Instructions:

  1. In a separate mixing bowl, combine all streusel ingredients (1 cup packed light brown sugar, 1 cup all-purpose flour, 1/2 cup quick cooking oats, and 1/2 cup softened butter). Mix with your hands or a pastry blender until well combined and crumbly.
