Ingredients
  • 1 lb. ground chicken
  • 1 Tbsp balsamic vinegar
  • 2 tsp low sodium soy sauce
  • 1 tsp fresh lemon juice
  • 1/2 tsp chili powder
  • 1/4 cup shredded sharp cheddar cheese
  • 3/4 cup Panko breadcrumbs
  • Pesto:
  • 5 oz. fresh baby spinach
  • 1/2 small white or yellow onion
  • 2 cloves of garlic
  • 3 green onions, roughly chopped
Instructions
  1. To prepare the vibrant pesto, place the fresh baby spinach, half a small onion, garlic cloves, and roughly chopped green onions into a food processor. Pulse briefly until a nice pesto consistency is achieved – you’re looking for a texture that’s smooth but still has a slight bite, not a completely smooth paste (as pictured above). This typically takes just a few quick pulses.
  2. In a large mixing bowl, combine the ground chicken, Panko breadcrumbs, shredded sharp cheddar cheese, chili powder, fresh lemon juice, low sodium soy sauce, and balsamic vinegar. Mix these ingredients thoroughly until well incorporated. Next, gently fold in the freshly made pesto mixture. For best results and even distribution of flavors, I recommend using clean hands to mix everything together. Once combined, form the mixture into 4 or 5 patties, depending on your desired size.
  3. For optimal flavor development, cover the formed patties and refrigerate them for at least a couple of hours before grilling. This allows the various flavors to meld beautifully. When ready to cook, preheat your grill to medium-high heat. Grill the burgers, flipping them once, until they reach your desired doneness and are cooked through. A general rule for chicken burgers is to ensure they reach an internal temperature of 165°F (74°C). If grilling weather isn’t cooperating or you don’t own a grill, you can also cook these burgers on medium-high heat in a cast iron skillet for a few minutes on each side. Serve your delicious burgers on hamburger buns with garnishes of your choice. I personally enjoy mine with extra cheddar cheese, a dollop of BBQ sauce, and crisp lettuce for a delightful textural contrast.
