- 1 lb breakfast sausage
- 1/4 cup finely diced onion
- 3/4 cup fresh baby spinach
- 6 large eggs
- 1/4 cup heavy cream
- 1/4 cup shredded Jarlsberg Swiss cheese
- 6 small slices Jarlsberg Swiss cheese
- salt & pepper, to taste
- cooking spray
- Preheat oven to 350°F.
- In a large skillet, brown sausage over medium-high heat until no longer pink.
- Remove sausage to a paper towel-lined plate to absorb extra grease; leave a bit of grease in the pan (add a touch of olive oil if no grease remains).
- Cook onion and spinach in the pan until soft. Season with salt and pepper, to taste.
- In a medium mixing bowl, beat eggs and cream together until well combined.
- Stir in the cooked sausage and onion/spinach mixture. Add in the shredded cheese. Season with salt and pepper, to taste.
- Butter or grease a 12-cup muffin tin.
- Spoon about 1/4 cup of the mixture into each muffin cup.
- Cut each slice of Jarlsberg Swiss cheese in half and place one square of cheese on top of each filled muffin cup.
- Bake in the preheated oven until the cheese is bubbly, and the frittatas are set in the middle and lightly browned, about 20-25 minutes.
- Remove frittatas from the oven and allow to cool for about 5 minutes.
- Carefully remove from muffin tins and serve warm. Enjoy your delicious frittatas!
