  • 1 teaspoon vanilla extract
  • Candy Eyes, for decorating
  • Black frosting gel (like this one)
Instructions
  1. Preheat your oven to 200˚F (93˚C). This low temperature is key for drying the meringues slowly, resulting in a crispy exterior.
  2. Line 2 large baking sheets with parchment paper or a silicone baking mat. This prevents sticking and ensures easy removal.
  3. Place the cream of tartar in the bowl of a stand mixer fitted with the whisk attachment.
  4. Pour your room temperature egg whites over the cream of tartar. Turn the mixer on low speed and allow them to gently mix together for a minute.
  5. Slowly increase the mixer speed to medium. Beat the egg white mixture until it becomes foamy and opaque.
  6. Continue to slowly increase the speed to high and beat until soft peaks form. These peaks will hold their shape briefly before drooping slightly.
  7. Gradually add the sugar, one tablespoon at a time, allowing it to fully incorporate after each addition. This slow process helps to dissolve the sugar and create a stable meringue.
