Ingredients

  • 1/2 cup of sugar
  • 1/2 cup of powdered sugar
  • 1/2 cup 1 stick of butter softened to room temp
  • 1/3 cup canola OR vegetable oil
  • 1 large egg
  • 2 and 3/4 cups of all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp cream of tartar
  • 1/2 tsp of cherry Jello powder mix
  • 1/2 tsp water
  • 1/2 tsp berry blue Jello powder mix
  • 1/2 tsp water
  • Red and blue food coloring
  • Popsicle sticks optional

Instructions

  1. In a large mixing bowl, add the sugar, powdered sugar, and butter. Beat with a hand mixer or in the bowl of a stand mixer until the mixture becomes light and fluffy, typically around 3-4 minutes.
  2. Add the oil and the egg, then beat until thoroughly mixed and combined.
  3. In a separate mixing bowl, combine the flour, salt, baking soda, and cream of tartar; whisk these dry ingredients together. Gradually add the flour mixture to the wet mixture, one cup at a time, beating on a low to medium speed until all the flour is just incorporated into a cohesive dough.
  4. Divide the prepared dough evenly into three medium-sized bowls. In two small separate bowls, add 1/2 tsp cherry Jello powder to one bowl with 1/2 tsp of water, stirring until dissolved. Repeat this process with the berry blue Jello powder in the other small bowl.
  5. Pour the cherry Jello water mixture onto one of the dough balls, then add several drops of red food coloring to that same dough ball. Similarly, pour the berry Jello water mixture onto a second dough ball and add blue food coloring to it.
  6. Line a baking sheet with parchment paper and set it aside. Take the non-dyed dough ball (the white portion) and form it into an 8-10 inch long rectangular block, placing it neatly in the middle of the prepared baking sheet.
  7. For the next step, I highly recommend wearing plastic gloves to prevent staining your hands. Take the red dough ball and mix it thoroughly with your hands until the entire ball is uniformly red, with no streaks of uncolored dough visible. You may need to add additional red food dye to achieve a brighter, more vibrant color.
  8. Form the red dough into another long block, similar in size to the white dough, and carefully place it on the left side of the white dough log on the tray. Repeat this process with the blue dough: mix until uniform in color, then form it into a log and place it on the right side of the white dough. Once all three logs are in place, cover them tightly with plastic wrap and refrigerate for 30 minutes to firm up.
  9. Preheat your oven to 350°F (175°C) and line a fresh baking sheet with parchment paper. Remove the chilled dough log from the refrigerator and carefully cut crosswise pieces, about 1/4 inch thick. For an authentic Bomb Pop look, gently insert a popsicle stick into the bottom of each cookie slice before placing it on the baking sheet. Use a fork to lightly press into the top of each cookie to create decorative lines, mimicking the texture of a real popsicle.
